What people eat in Borno
Grain staples, groundnut and pumpkin soups, dried meat.
The North-East eats much as the North-West does — tuwo with a thick soup — with its own emphasis:
- Tuwo shinkafa and tuwo masara, with miyan taushe (pumpkin and groundnut) or miyan kuka.
- Dambun nama — shredded, spiced dried beef.
- Kilishi — dried spiced meat, keeps for weeks.
- Suya, grilled in the evenings.
- Fura da nono — millet in fermented milk, drunk cold.
Groundnut appears in more dishes here than anywhere else in the country. If you have a groundnut allergy, say so clearly and repeatedly — it is not an assumption kitchens make.
